Spring is a great time to make fresh vegetable juices to promote the liver's function of smoothing out the flow of energy (qi) and blood in the entire body-especially the musculature. If you've been drinking a little too much alcohol since the holidays and/or are feeling tight muscles, irritable and out of balance-
try this instant mineral infusion:
carrot, ginger, beet, turmeric, apple

Wait there's more- you can use the pulp from all the veggies to make a "beet loaf"!
If you use approx 5 carrots, 2 beets, an inch of ginger and turmeric plus one apple you should have 1 and 1/2 cups to mix with 1/4 cup of oil, 1/2 c. honey, 2 eggs and 1 tsp. of pure vanilla extract. Separately mix 1 & 3/4 cups of wild rice or other flour with 1/2 cup of arrowroot and 2 teaspoons of baking soda. Then pour the liquid mixture into the flour bowl and mix with a few swift strokes. Pour into a greased (I used butter) 9x5 loaf pan or some such and bake at 350 degrees for 60 minutes.
Let your beet loaf stand in pan for 10 minutes, then turn the loaf out onto a wire rack to cool.
